Here goes two more pounds from the great cookie

I have always enjoyed Short bread cookies with the littledesigns impressed in the top of the cookie. Now I havean excuse to make more shortbreat cookies; unfortunately,Now I have a few more pounds from the butter and sugarfor the cookie. Everyone in the family is really impressedand the cookies disappear quickly.

Christmas baking without the fuss/muss

Christmas cookies are traditional in our house, not just shortbread. I like this pan for sugar cookies as well as other cookie recipes. I am going to try a Spritz dough in it. I always loved embossed items so this pan tells a story at Christmas for me. When I was little, my grandmother baked Sprinkle cookies (white embossed abuse flavored) for me which fascinated me and I never forgot. Because of this memory, I feel in love with these pans when I discovered them.A trick I learned from a cake book that works very well is to prepare your pans from a baker's mixture of 1 cup of shortening, 1 cup oil, and 1 cup of flour. It really works! I keep this mixture in my fridge with a designated pastry brush and never have stuck baked goods! Nor do I have residue buildup on pans from the sprays.....cheaper too!This is a great mold and will become a tradition for your Christmas cookie plate. It would make a great gift for a newlywed or even a child to encourage baking. Bake their favorite cookie in it and include the pan and rcipe.I prefer a tender shortbread and discovered soy lecithin which can replace some of the fats in recipes and keep foods fresh longer. I also read about mixing all-purpose flour with cake flour to get a more ten shortbread. King Arthur has some great recipes for these pans.My problem? I love them all and can't decide what to bake!Happy baking!
